wip: Start on stats measure
...
Trying some things with sampling data. Started with just plotting bottom
bathymetry, and a way of sampling along the measuring line. Hopefully
that will make it easy to pull down whatever stats after the fact.
Also, ruined the plotly import (sry @mrtz ). Imported Plot through
react-plotly.js directly, which didn't work with the aliasing. Will try
to fix later.

chore: Switch from vite to rolldown-vite
...
Improves our build performance, down to 1.4s and
`oxc` also decreases our bundlesize to under 3MB.
It exposes the same API so changes are minimal.

Set the top-level drifters model on unmounting the sim controls
component. Then check when you enter sim-mode whether you have a
drifters stored. Also show a litte notice whether a sim is in creation.
